Paneer Pasanda Recipe


200 gms soft fresh paneer (a rectangle shaped bar)
khoya or mawa 100 gms
1 cup milk
2 tablespoon misti dahi(if not available plain yogurt with spoonful of sugar can be used)
50 gms melted salted butter
1 tablespoon cashewnut paste
few mixed whole dry fruits
1/2 teaspoon roasted kasuri methi
1/2 teaspoon cornstarch
3 red tomatoes
1 large red onion
1/2 teaspoon garam masala powder
1 teaspoon kashmiri red chilli powder
1/4 teaspoon turmeric powder
1 tablepoon jeera dhaniya mixed powder
1 teaspoon ginger garlic paste
1 teaspoon lime juice
1 bay leaf,2 cloves,2 cardamom,few pepper corns
2 tablespoon refined oil
1/2 teaspoon sugar
salt to taste

cut the rectangular bar in middle so that they form 2 square bars.marinate with salt and lime juice for 1/2 an hour .in a kadhai add 1/2 teaspoon butter.add the mawa,pinch of sugar and dry fruits .now slit the paneer burs in middle.stuff with the mawa mixture.coat the paneer with the cornstarch.shallow fry them from both the sides.cut them into triangle shape and keep aside.they form 4 sandwich shaped pieces.
next step is gravy preparation .
mix the milk,misti dahi,cashew paste and mawa to for a thick cream mix.add the remaining butter mixed with oil.saute the onion and the tomatoes.blend them in a the butter in the kadhai add the whole spices.pour in the tomato onion paste.cook covered for 6 add the ginger garlic paste.cook for 2 mins.add the remaining masalas and cook for sometime .add 2/3rd of cream.let it get nicely blend with the gravy to form a thick creamy orange gravy.sprinkle the kasuri methi.slowly put the stuffed paneer.adjust the salt.garnish with the remaining cream .serve hot.
