Mint Rice (serving size : 2 )
1 cup mint leaves ( phudina)
1 cup coriander
salt to taste
1 medium sized onion
1/2 medium sized tomato
1 cup boiled carrot and green peas
garlic as per taste
4 green chillies
1 cup boiled basmati rice.
Grind mint leaves , coriander , salt , black salt ,
lemon juice , 4 garlic cloves and green chillies to make a fine smooth paste.
Add 2 tsp ghee and add the fine mint puree to it.
Add finely chopped onion and saute until onions turn transparent.
Add capsicum and cook on high flame to maintain its crunchiness.
Add carrots , green peas and tomato to this.
Add rice to it and season it with pulao masala and salt. Garnish it with mint leaf. Serve hot with boondi raita.
