Mixed Vegetable Soup
100gms or ½ tea-cup tomato
Carrots(cut into 1/2 inch pieces) 125gms
beans(cut into 1/2 inch pieces) 50gms
Cauliflower(cut into small pieces) 100gms
Potato(cut into 1/2 inch pieces) 75 gms
Green peas 50gms
Water 2 cup(250ml)
Ghee 1 tbsp
Cornflour 2 tsp
salt – according to your test
Method for preparing Microwave Vegetable Soup:
Boil 2 cup water with the bay leaf, cloves, peppercorns and cinnamon in a bowl on 100% power of microwave for 4mins
Add the chopped vegetables and peas and cook on 100% power of microwave for 10 mins or till the vegetables are soft. Add water if needed. Stir once during cooking. Allow to stand for 5mins
Strain the stock, discard the whole spices and keep aside.
Heat Ghee in a 2 litre deep bowl on 100% power for 40secs
To this butter add the pureed tomatoes and microwave on 100% power of microwave for 5mins
Stir once during cooking
Add the vegetables stock, milk , salt, pepper powder and soya sauce. Mix well and microwave on 100% power for 6mins or till it starts to boil
dissolve the cornflour in a little water and add to the boiling soup.
Stir and microwave on 80% power for 3-5mins , till thick.
