Ingredients

1.5 kg red chilies

100 Gms coriander powder

100 Gms raw mango powder

100 Gms yellow mustard seeds powder

100 Gms black mustard seeds powder

100 salts

1 liter mustard oil

Method

Wash and thoroughly dry the red chilies, remove the stems,

slit each from the top, and remove flesh and seeds.

Roast dry the mustard seeds for 5 minutes over medium flame, grind it to powder.

Roast coriander powder for 3-4 minutes over medium flame, stir constantly.

Mix coriander powder, mustard seeds powder, mango powder, salt, flesh and seeds and 200 ml of oil. Mix well.

Stuff all the chilies with this mixture. Place it in a glass jar.

Put in sun light for 3-4 days.

Add the remaining oil.

Achar is ready.
