jamikand(elephant yam) ka achaar


500 grams suran (elephant yam)

500 grams garlic cloves

50 grams salt

50 grams red chillies powder

500 c.c. (½ kg) mustard oil


Remove skin. Wash and dry using kitchen towel.

Chop suran and garlic cloves. Now mix all the ingredients in a bowl.

Transfer the mixture to a glass jar.

Cover the month of the jar with a piece of muslin, fastened with a string. Place the jar in the sun for 40 days to mature.

It is rich in nutrients and minerals and helps in digestion.
