for panipuri

Use ready-made packet of puri,

for filling massala

5-6 midium size boiled potatoes,

2-3 tbsp boiled chana(or peas)

2- green chili(chopped)

1/4-  inch ginger (chopped)

1/4 – tsp salt

for pani

1 litre water

1 tbsp tamarind paste

1 tbsp lemon juice

1/4 tsp roasted cumin powder

1/4 tsp black pepper powder

1/4 tsp red chili powder

1/2 tsp black salt

1/2 tsp salt(as to test)


refined oil as required for frying readymade panipuri.


puri—fry puries using oil and high flame, use oil soak paper to collect it,cool it,put it in a air tight container.

Filling massala—smash potatoes,mix all the ingredients of filling massala gentely,set aside.

pani—mix all the ingredients of pani properly.set aside.

Take a puri, using a finger do a small whole, half fill with filling massala, now fill it with pani.
