hot tomato sauce

6 medium tomatoes, quartered
1 small carrot, cut into ¼ – inch cubes
8 garlic cloves, crushed
1/2tsp ginger paste
10-12 dried red chillies
1 tablespoons mustard oil
1 teaspoon black pepper powder
Salt to taste
½ teaspoon sugar
¼ tsp cumin seeds
2tbsp white vinegar
Heat the oil in a pan on medium flame; add cumin seeds after 30 seconds add red chillies, garlic again after 30 seconds add the carrot, ginger paste to the oil. Cover and cook on low heat for 2-3 minutes
Add the tomatoes, pepper powder, salt and sugar. Cover and cook for 5 minutes. Stir well to mix. Add vinegar and simmer for 1 minute as oil rises to the surface off the heat.
Let it cool. Puree the mixture in a blender. Store in a glass bottle.
