Cucumber Boats Recipe

Ingredients :

  • cucumber – 3 medium
  • carrot – 2 medium, chopped
  • sweet corn – 1/2 cup
  • green peas – 1/2 cup
  • green chillies – 4 chopped
  • capsicum – 1 medium
  • tomatoes – 2 medium
  • cashew nut powder – 3tbsp
  • coconut – 2tbsp grated
  • mustard seeds – 1/2 tsp
  • sugar – 1/2 tsp
  • raisins – 1tsp
  • lemon juice – 1tbsp
  • curry leaves – few
  • refined oil – 3 tbsp
  • salt – according to taste.

Method :
Peel and slice cucumber into length – wise halves and remove seeds.
Cut off a thin slice from under each half so the cucumber lies flat.
Heat oil in a pan.
Add mustard seeds, curry leaves and grated coconut.
Add chopped carrots, chillies, peas, sweet corn, cashew nut powder, raisins and salt.
Cook for 8 to 10 minutes in low flame till the vegetables are soft and tender.
Add sugar and stir for a minute.
Remove from heat. Add lemon juice and mix well.
Fill cucumber boats with the mixture.
Decorate with sliced tomatoes and capsicum.
CUCUMBER BOATS can be used as a starter.This recipe is ideal for evening snacks.
