CORN AND CHEESE PAV BHAJI

Serves:  4 to 6

Preparation time:  10 Mins.

Cooking time:  30 min.

Ingredients:

1 ½ cups cauliflower

2 cups green peas

5 nos. potatoes

2 nos. capsicums

2 nos. onions

2 nos. tomatoes

2 tsp. ginger-garlic-chilli paste

2 tsp. red chilli paste

2-3 tsp. pav bhaji masala

salt to taste

2 cups American corn, boiled

1 tbsp. butter

a few sprigs of coriander leaves

Method:

1. Boil the potatoes, cauliflower and green peas, strain and mash well.

2. Chop the capsicums, onions and tomatoes finely and keep aside.

3. Heat butter in a vessel.  Add the chopped ingredients to it and shallow fry.

4. Mix the ginger-garlic-chilli paste and add the masala to the mixture.

5. Let it simmer for 10 mins.

6.  Now add the mashed vegetables, corn and mix well.

7.  Garnish with coriander leaves and serve hot with salad, papad and pav.
