1 onion chopped
2 tomatoes chopped
1 bunch of coriander leaves, chopped finely
2 green chilies, chopped finely
1 inch ginger piece, chopped finely
10 garlic cloves, chopped
Salt to taste
1 tbsp mustard oil
Heat two cups of water in a cooker add brinjals, cook it under full pressure for five minutes, cool it, take out brinjals, remove the skin, set aside.
Heat oil in a frying pan and season it with mustard seeds on medium flame, garlic and ginger, stir it cook for one minute, add onion cook till golden brown then add tomatoes cook for one minute, add boiled brinjal, salt and coriander leaves, stir well, cook for two minutes, off the flame.
Brinjal mix is ready.
