Baigan ka pakora recipe

For six persons
Time 20 – 30 minutes

1/2kg Baigan (brinjals)
250gms besan (gram flour)
1/2tsp garlic paste
1/2inch piece of ginger paste
1tsp dhania (coriander powder)
1/4tsp turmeric powder
1/2tsp salt (as to taste)
250gms mustard oil


Wash brinjals, remove cap, cut in to circular slices of thickness 2-3 mm, place slices in water.

In a bowl take gram flour, garlic paste, ginger paste, coriander powder, turmeric powder and salt add 5tbsp of water and stir well to get a very thick uniform paste. Add slowly small amount of water and mix well to get a very thin paste. Dip all the sliced brinjals in it.

Heat mustard oil in a frying pan for 2-3 minutes on medium flame, now fry brinjals slices covered by thin paste one by one to deep brown. Pakora is ready
Serve hot with tea or desired sauce.
