100 Gms curd
250 Gms green peas
100 gms mustard oil
3 green chilies finally chopped
1 inch piece of ginger finally chopped
A small bunch of green coriander finally chopped
½ tsp coriander powder
1 tsp tamarind powder
1 tsp salt
½ tsp black salt
1 tsp roasted cumin seeds( powder)
2 tsp sugar
Beat curd, add sugar, black salt, roasted cumin powder. Stir well.
Take green peas in a cooker together with ½ tsp tamarind powder, ½ tsp salt and add water to cover green peas. Heat it under full pressure. Cool it naturally.
Boil potatoes, remove the skin, add chilies, ginger, coriander powder and one tsp salt, well mash all them. Divide into 8-10 parts, with oily hands roll each of them into balls.
Heat mustard oil in a heavy frying pan on medium flame, gently press each ball to be flattened, place in hot oil, cook till the two sides becomes brown.
Place 2-4 tikki on a plate, mash very slight, spread first boiled green peas, spread beaten curd mixture and sprinkle red chili powder, roasted cumin seeds powder and a little black salt.
Ready to serve.
